Mock Eggs by IIT Delhi

Professor Kavya Dashora from the centre for rural development and technology, IIT Delhi has received the first prize at the Innovate4SDG contest organised by the United Nation Development Programme (UNDP) for innovating a plant-based mock egg. 

The event was organised at the Accelerator Lab India and the winner, Kavya will be awarded prize money of $5,000 (INR 3,70,000). The Head of Economic Cooperation and Development, Embassy of the Federal Republic of Germany, Christiane Hieronymus along with Professor K VijayRaghavan, principal scientific adviser, Government of India, conferred the award online. 

Pertaining to the cause that the majority of the people have now opted the path of following a vegan diet, the innovation of mock eggs will help people meet their protein needs. Not only the vegans but vegetarians can also consume this product. This innovation by IIT Delhi aims to address Sustainable Development Goals 2 and 3 including ‘good health and well-being’ and ‘zero hunger’.

All About Mock Eggs by IIT Delhi 

In an interview, Professor Kavya Dashora mentioned that with the help of plants that have a texture similar to that of egg, fish and meat; lighting products have been developed which can help people fight the battle of malnutrition through clean intake of protein. Very simple farm-based crop proteins are being used in the development of markets that not only taste like eggs but also contain the same nutritional value as that of a poultry egg. 

Along with mock eggs, the scientists of IIT Delhi have also developed analogues for fish and chicken meat using similar plant sources, fruits and vegetables. During the final competition, parameters such as bite-size, taste, texture, nutritional profile, flavour, aroma, shelf life and customer preference were put into consideration while examining the mock meats.
